  • 1 cup all-purpose flour

  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon

  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup raisins or dried cranberries
  • 1 cup grated carrots
  • 1 cup grated apple
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons vanilla extract


Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, and salt.

Stir in the shredded coconut, chopped nuts, raisins or dried cranberries, grated carrots, and grated apple until well combined.

In a separate bowl, whisk together the eggs, vegetable oil, applesauce, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let cool in the muffin tin for 5 minutes, then transfer the muffins to a wire rack to cool completely.
