Prepare Ingredients: Gather all the ingredients for the chilli oil.

Heat Oil: In a small saucepan, heat the vegetable oil over medium heat until hot but not smoking.

Infuse Flavors: Add the red pepper flakes, Sichuan peppercorns, minced garlic, and grated ginger to the hot oil. Stir continuously for 2-3 minutes until the ingredients release their aromas.

Make Broth: In a large pot, bring the chicken or vegetable broth to a simmer. Add soy sauce, miso paste, and sesame oil. Stir until the miso paste is fully dissolved.

Add Vegetables and Tofu: Add the chopped bok choy, sliced shiitake mushrooms, and cubed tofu to the simmering broth. Cook for 3-5 minutes until the vegetables are tender and the tofu is heated through.

Assemble Ramen Bowls: Divide the cooked ramen noodles among serving bowls. Ladle the hot broth with vegetables and tofu over the noodles.

Drizzle Chilli Oil: Drizzle a generous amount of the homemade chilli oil over each ramen bowl. Adjust the spice level according to your preference.
