White Chocolate Macadamia Nut Cookies Recipe

Gluten-free white chocolate chip cookies with macadamia nuts and dried cranberries! These cookies have amazing chewy centres and crispy edges. Skip the cranberries if you don't like them!

INGREDIENT

– 2 sticks (1 cup, 225g) unsalted butter softened – ¾ cup (150g) brown sugar packed – ¼ cup (50g) granulated cane sugar – 1 large egg at room temperature – 2 tsp pure vanilla extract – 2 cups (250g) gluten-free flour – 1 tsp baking powder – ½ tsp baking soda – ½ tsp sea salt – ⅔ cup (107g) white chocolate chips – 1 cup (125g) macadamia nut – ⅔ cup (86g) dried cranberries

INSTRUCTIONS

Mix softened butter, brown sugar, and white sugar in a stand mixer with the paddle attachment. Large mixing bowls and electric mixers work too. Beat butter and sugar on medium-high until fluffy.

Step 1

Add egg and vanilla extract after scraping bowl sides with a rubber spatula. Beat egg, creamed butter, and sugar on medium-high speed until combined. Scrape mixer sides again with a rubber spatula.

Step 2

Mix gluten-free all-purpose flour, baking powder, baking soda, and sea salt in another bowl. Add dry ingredients to the mixer with wet ingredients and beat on medium speed until thick cookie dough forms.

Step 3

Combine macadamia nuts, white chocolate chips, and dried cranberries. Beat dough until ingredients are evenly distributed.

Step 4

Wrap the stand mixer bowl in plastic and refrigerate for 1 hour. Refrigerated dough lasts 4 days. Dough freezes for 3 months.Preheat oven to 350°F before baking cookies.

Step 5

Use parchment on a large baking sheet. Place dough mounds apart on the baking sheet. Cookies spread greatly when baked. Make any size or small scoop cookies.

Step 6

After 11–13 minutes on the centre rack of the preheated oven, the edges should be lightly golden brown. 9–11 minutes produces chewier cookies, 12–13 minutes crispier.

Step 7

Bake time depends on cookie dough ball size and oven temperature. Mini cookies are 9–10 minutes faster. Big cookies take 11–13 minutes.

Step 8

Let the cookies cool on the baking sheet for 10 minutes before moving. Place on a wire rack after 10 minutes of cooling.
