Sugo Recipe

Sugo di Pomodoro is a basic Italian "sauce" recipe. To enhance tomato flavor, this recipe employs few ingredients and slow cooking. Serve with spaghetti or use as a delicious tomato sauce.

– 2 tablespoons olive oil – 1 small onion, diced – 3 cloves garlic, smashed (not minced) – 28 ounce can San Marzano tomatoes, whole – ½ cup red wine (optional) – 1 teaspoon granulated sugar (optional) – ¼ cup fresh basil leave – kosher salt to taste

Place olive oil in a pot on medium heat. After warming the oil, add the diced onion and cook for 2-3 minutes to soften.

Smash garlic cloves and add to pot. Remove the garlic from the pot and discard after 2 minutes of sweating with the onions.

If using, add San Marzano tomatoes and red wine. Cover and boil for 20 minutes, stirring periodically.

Cut tomatoes in half with kitchen shears or a knife after removing the lid. If using, add sugar and boil until sauce thickens, 30–40 minutes.

Crush tomatoes with an immersion blender after turning off the heat. Add shredded basil. Check seasonings and add kosher salt. Serve now or refrigerate.
