ROYAL ICING RECIPE

This season, readers love my simple sugar cookie icing from years ago. A simple royal icing recipe has been requested several times since. My favourite royal icing recipe!

– 4 cups powdered sugar (480 grams) – 3 tablespoons meringue powder (27 grams; I use Wilton)

Ingredient

– 6 tablespoons warm water plus more as needed to thin the icing – 1 tablespoon light corn syrup optional but recommended – 1 teaspoon pure vanilla extract

Direction

First, you need a handheld or stand mixer with a whisk attachment. Without a clean, grease-free bowl, your icing won't set.

Royal icing is made by mixing powdered sugar and meringue powder in a bowl or stand mixer. After adding the warm water, mix on low speed until well mixed.

Get out of the bowl and scrape down the sides. Then, add the corn syrup and vanilla extract and mix on low speed.

After combining, increase the speed to medium and mix until the icing reaches stiff peaks or your desired consistency. No need to worry about consistency! The consistencies will be explained in detail below.
