Ricotta Chocolate Chip Cookies Recipe

An easy Italian recipe for soft and creamy ricotta cookies uses butter and baking powder. They have granulated sugar, gourmet chocolate chips, and icing, jam, glaze, or frosting.  

– 1 cup Ricotta cheese – ½ cup white granulated sugar + ⅓ cup for dipping – 1 large egg  – 4 tablespoons unsalted butter  – 1 ½ cups all-purpose flour – 1 teaspoon vanilla extract – ½ cup semi-sweet chocolate chip – ½ teaspoon salt – 1 teaspoon baking powder

Set the oven's temperature to 350 degrees. Combine sugar and softened butter in the bowl of an electric stand mixer.

Using an electric mixer fitted with a paddle attachment, beat on low speed until well combined and creamy. Add vanilla and stir.

Beat the egg in and then the ricotta cheese until well combined. Blend. Mix the flour, baking powder, and salt in a different bowl.

Using a spatula, mix the dry ingredients into the wet ones in three batches. Knead the batter with your hands if it's too thick.

Repeatedly knead until everything is combined and forms a big ball. The dough for the cookies shouldn't be overly sticky.

Coat every cookie ball in powdered sugar. Ensure that these are well coated. Line a parchment paper-lined cookie sheet.

Single-layer the cookies on the sheet and bake for 17 minutes until golden brown. Before serving, cool ricotta chocolate chip cookies on a wire rack.
