For peanut butter and chocolate lovers, these homemade turtles are a dream! DIY holiday gifts are fun and easy!
INGREDIENT
Peanut Butter Layer:– ½ cup creamy unsweetened peanut butter at room temperature– 1 cup powdered sugar *– 1 Tbsp melted coconut oil or melted butter, or avocado oilChocolate Coating:– 1 cup semisweet chocolate chips **– 2 tsp coconut oil or 1 Tbsp butterPecan Turtles:– 60 pecan halves 5 pecans per turtle– Coarse Sea Salt optional
INSTRUCTIONS
Parchment or wax a large baking sheet. No worries if you lack either. Avoid the paper liner—DIY turtle candies shouldn't stick.
Step 1
In a small bowl, mix peanut butter, powdered sugar, and coconut oil to make thick, moldable dough.
Step 2
Heat cold peanut butter in the microwave for 30 seconds until stirable. Peanut butter and sugar are easier to mix with a stand mixer.
Step 3
Place 5 raw pecan halves in a turtle shape on the baking sheet. Repeat with remaining turtle pecan clusters in a single layer. Shape 1–1.5 tablespoons of peanut butter into an oval/shell and press onto pecans.
Step 4
Press pecans into peanut butter to secure. Return the turtle to the baking sheet. Use remaining peanut butter and pecans.
Step 5
Heat the chocolate chips and coconut oil (or butter) in a microwave-safe bowl for 30 seconds at a time, stirring well, until melted (1–1.5 minutes).
Step 6
Chocolate doesn't need microwaved runny. Chocolate mixture should be thick and spoonable but not runny. Cool the chocolate for a few minutes to thicken.
Step 7
Melt one tablespoon of chocolate and drizzle it over peanut butter for a turtle shell. Sprinkle pecans or sea salt on the shell. Set the baking sheet in the fridge or freezer for 2 hours. Serve and enjoy!
