Pasta Fazool Recipe

 The combination of sausage, pasta and beans in this Italian pasta soup creates a rich, complex flavour that is comforting and satisfying.

– 1 pound ground sausage or ground beef/pork – 1 ½ cups chopped yellow onion – 1 cup carrots diced – 1 cup celery about 3 stalks  – 1 tablespoon minced garlic clove – 2 ½ cup tomato puree or passata – 3 cups low-sodium beef broth or chicken stock – ½ cup water then more as desired – 1 15 ounce can crushed tomatoe – 2 teaspoon granulated sugar – 1 ½ tablespoon Italian seasoning Herbs and spice – salt and freshly ground black pepper – 2 tablespoon olive oil divided

Use 1 tablespoon of cooking oil to brown beef over medium-high heat in a large pot or dutch oven. Remove fat and place on a plate.

 Finally, add beef, Italian herbs, sugar, salt, and black pepper. For two minutes, mix everything. Beef broth, tomato sauce, water, and canned tomatoes.

Reduce heat to medium-low after simmering and boiling over medium heat. Cook vegetables until soft but tender. Cook the ditalini pasta per the package.

To the soup, add cooked pasta, white beans, and kidney beans. Assess seasoning. Just add water or broth if the soup seems too thick.

Please cook 1 minute longer. Mix in parsley and serve warm with Romano or Parmesan.
