Mix the dry ingredientsAdd salt, baking soda, and oats to a bowl and mix them together.

Mix Wet IngredientsCombine butter, sugar, eggs, and vanilla in a bowl.Whisk the ingredients until the batter is light and fluffy.

Mix Wet and DryMix the oats and coconut flour with the wet batter. Fold the mixture with a spatula to get a homogeneous dough.

Bake for 10-12 minutes at 180 C. Cool 5 minutes on the baking tray before transferring to a cooling rack. Cool thoroughly and store.
