Mashed Sweet Potatoes With Brown Sugar And Bacon Recipe
Brown sugar-infused ultra-creamy sweet potatoes are delicious and not too sweet. We love topping sweet potatoes with crumbly bacon and other simple ingredients.
– 2 pounds sweet potatoes peeled and chopped into 2 or 2.5-inch cube– 2 tablespoons salted butter or unsalted + more for serving– ½ cup milk warmed– a pinch of salt– ¼ teaspoon black pepper– 6 slices bacon– 2 teaspoon dark brown sugar

Sweet potato recipes have two options. Boiled and steamed. The boiled method is still easier and my favourite. Cook potatoes in a large pot with salt and black pepper.

Time: 10-15 minutes. Cook potatoes whole or cubed to save time. Drain well until all water evaporates. Put the potatoes back in the pot or bowl.

After roughly mashing the potatoes with a potato masher, I add milk and whip with an electric hand mixer until creamy. In batches, add warm milk and potatoes and whip until creamy.

Meanwhile, crumble bacon in a pan with 1 teaspoon brown sugar. Remove excess fat on paper towels. Check and season the potatoes again.
