Italian Apple Cake Recipe

Italian Apple Cake is delicious with olive oil and lemon. Shredded and chopped apple enhances apple flavor and moistens the cake.

– 3 medium apple – 1 lemon (zested and juiced) – 3 large egg – 1 cup sugar – 1 cup milk (2% or whole) – ⅔ cup olive oil – 2 teaspoons vanilla – 3 cups flour (455 grams) – 1 tablespoon baking powder – ½ teaspoon salt – 2 tablespoons sugar (for sprinkling) – powdered sugar for dusting (optional)

Warm the oven up to 350 degrees. Melt some butter or use cooking spray to grease a standard bundt cake pan. Set it aside.

Three cored, peeled apples. Two apple half-inch slices. Grind an apple with a larger-holed box grater. Mix apples, 2 tablespoons lemon juice, and 1 teaspoon lemon zest in a medium bowl. Save.

In large basin, beat eggs and sugar. Mix with a handheld mixer for 2-3 minutes until foamy. Mix pale?  Mix milk, olive oil, and vanilla. Mix flour, baking powder, and salt.

Mix the apples into the batter. Fill the cake pan with batter. Sprinkle two teaspoons sugar on cake.

Center rack baking takes 40–50 minutes. After pulling away from the sides, the cake is done. A cake toothpick will come out mostly clean, except for crumbs.

Remove cake from pan and cool on rack after 10 minutes. Sprinkle powdered sugar on the cake when it cools.
