Homemade Pie Crust Recipe

This is a simple guide on how to make your own pie crust! There are only a few simple ingredients in this recipe, but it always works out perfectly.

INGREDIENTS 

SERVINGS: 2 PIE CRUSTS – 2 and 1/2 cups (315 grams) all-purpose flour (spooned & leveled) – 2 teaspoons sugar – 1 teaspoon salt – 1/2 cup (115 grams) cold unsalted butter cubed – 1/2 cup (95 grams) cold vegetable shortening cut into a few piece – 1/2 cup (120 ml) ice water

INSTRUCTIONS

Mix flour, sugar, and salt in a large bowl. Add cold cubed butter and vegetable shortening. Use a pastry cutter or fork to cut them into pea-sized crumbs (some larger pieces are okay).

Stir in one tablespoon of ice water (you may not need 1/2 cup) until the dough comes together. Form a dough ball on a lightly floured surface. Make two discs from half the dough. Refrigerate for an hour after tightly wrapping each one in plastic.

Roll the dough to 12 inches, gently fit it into a 9-inch pie plate, trim any excess dough, and decorate the edges. Cover the bottom and sides of the pie dough with parchment paper or foil, then fill with pie weights (dried beans or rice work too!).

Bake 15 minutes at 400°F (190°C) with pie weights. After baking, remove the parchment paper and pie weights. Fork-prick the pie crust bottom to prevent bubbling and return to the oven.

Return the crust to the oven for 5 more minutes until the bottom is dry. Return to oven and bake 15-20 minutes until golden brown and cooked.
