Homemade Chocolate Cake Pops Recipe

Break up chocolate cake and mix it with frosting. Then, roll the frosting into balls and dip them in melted chocolate. It takes a little extra work to put together chocolate cake pops, but they're well worth it! 

INGREDIENTS 

FOR THE CHOCOLATE CAKE: – 1 cup all-purpose flour spooned & leveled (125 grams) – ¼ cup plus 2 tablespoons unsweetened natural cocoa powder (30 grams) – ¾ teaspoon baking powder – ½ teaspoon baking soda – ½ teaspoon salt – ½ cup packed light brown sugar (100 grams) – ½ cup granulated sugar (100 grams) – ⅓ cup canola or vegetable oil (80 ml) – ½ cup buttermilk (120 ml) – 1 large egg

INGREDIENTS 

– 1 teaspoon pure vanilla extract – ½ cup boiling water (120 ml) – 1 teaspoon instant espresso powder optional but recommended FOR THE CHOCOLATE FROSTING: – ¼ cup unsalted butter softened (½ stick; 60 grams) – ¾ cup powdered sugar (90 grams) – 2 tablespoons unsweetened cocoa powder sifted (10 grams) – 1 tablespoon milk (15 ml) – ¼ teaspoon pure vanilla extract

INSTRUCTIONS

Preheat the oven to 350°F (180°C). Preheat a 9-inch round cake pan with nonstick spray and parchment paper. Mix flour, cocoa powder, baking powder, baking soda, and salt in a large bowl. Mix brown and granulated sugar well. Add oil, buttermilk, eggs, and vanilla and mix briefly.

Mix instant espresso powder with ½ cup of boiling water until fully dissolved. Mix everything in the bowl until just combined. Thin batter. Fill the cake pan with batter.

Bake the cake for 28–30 minutes until a toothpick inserted into the centre comes out clean and the top springs back when lightly touched. After baking, cool the pan on a wire rack for 30 minutes. After knife-ing the edges, carefully remove the cake from the pan and cool on a wire rack.

Beat butter in a stand mixer with the paddle attachment or a large bowl with a handheld mixer until smooth. Add the powdered sugar and mix on low speed, then increase to medium speed for 1–2 minutes until fully combined.

Mix in the cocoa powder until it's well mixed in. Stop and scrape the bowl's sides. Then, add the milk and vanilla extract and mix on medium speed until everything is well mixed.
