Beautifully stir-fried jasmine rice with vegetables and Thai green curry paste. Replace chicken with tofu, prawns, or your preferred protein.
Ingredient
– 1 tablespoon vegetable oil or coconut cream– 2 tablespoons green curry paste– 2 cloves garlic minced– 1 cup protein of your choice chicken, shrimp, tofu, or a combination– 3 green onions chopped– 1 cup mixed vegetables such as bell peppers, peas, carrots, and broccoli, bamboo shoots, corn, diced– 1 tablespoon fish sauce optional for non-vegetarian version– 1 teaspoon sugar– 2 cups cooked jasmine rice preferably chilled or day-old– Fresh basil leaves for garnish optional– Lime wedges for serving

Make jasmine rice according to the package instructions and let it cool or use leftover rice.

Cut green onions, dice veggies, and thinly slice chicken breast.
Heat coconut cream or vegetable oil over medium-high heat in a large wok or skillet.

Stir-fry minced garlic for 30 seconds until fragrant.
After the garlic is aromatic, add green curry paste to the wok and stir-fry for 1-2 minutes to blend flavors.

Fry chopped onions till transparent. Stir sauté sliced chicken till done. Diced mixed veggies should be stir-fried until crisp but soft in the wok.

Put chilled or day-old rice in the wok. Mix the grains, vegetables, and protein, breaking up any clumps. Add sugar and fish sauce to rice. Mix everything to coat evenly.

Continue stirring for 1-2 minutes with chopped green onions until everything is properly mixed and cooked.

Taste and season as needed. Add fresh basil to green curry fried rice. Heat and serve with lime wedges.
