Frosted Brown Sugar Cinnamon Pop Tarts Recipe

Frosted brown sugar cinnamon pop tarts cooked at home. A sweet vanilla and cinnamon frosting tops a homemade brown sugar cinnamon filling between two layers of cinnamon dough, cooked until toasted. Brown sugar cinnamon pop tarts are flaky, sweet, and cinnamon-heavy.

– BROWN SUGAR CINNAMON FILLING – 3/4 cup light brown sugar – 1 tablespoon all-purpose flour – 1 tablespoon ground cinnamon – 2 tablespoons salted butter, melted – 1 teaspoon vanilla extract – DOUGH – 2 cups all-purpose flour – 1/2 cup whole wheat flour – 1/2 teaspoon ground cinnamon – 2 sticks (1 cup) cold salted butter, cut into 1/2 inch piece – 1 egg beaten, for brushing – FROSTING – 2 cups powdered sugar – 1 tablespoon vanilla extract – 1 teaspoon ground cinnamon – Cinnamon sugar, for sprinkling

Make filling. Mix everything in a basin. To make dough. In a food processor, mix flour, whole wheat flour, cinnamon, and butter.

Pulse until mixture forms pea-size balls. Add 1/2 cup cold water, 1 tablespoon at a time, until dough forms a ball. If dough is dry, add 1-2 teaspoons water.

Place dough on floured surface. Roll to 1/8-inch. Cut dough into 4x3-inch rectangles. Leave a 1/4-inch border around a rounded tablespoon of brown sugar filling on half the rectangles.

Beat the egg and brush the edges. Cover the filling with the remaining half of the dough and crimp the edges with a fork. Repeat until all dough is utilized.

Put pop tarts on parchment-lined baking pans. Fork-hole the tarts. Cover the baking sheets and refrigerate for 1 hour or freeze for 20 minutes.

Heat the oven to 400°F. Bake pop tarts 15-20 minutes till golden. Cool fully before icing. Meanwhile, create frosting. Mix powdered sugar, cinnamon, vanilla, and 3 tablespoons water in a medium bowl until smooth.

Adding 1-2 tablespoons of water thins thick frosting. Apply a thin layer of frosting on cooled pop-tarts. Allow pop tarts to firm uncovered on a baking sheet for 2 hours. Add salt or sugar. Save in an airtight jar for 3 days.
