Eggless Chickpea Cookies Recipe

Gluten-free Eggless Chickpea Flour Cookies (Besan Nankhatai) melt in your mouth. They go nicely with masala chai with four ingredients. A large vegetarian population in India makes nankhatais, Indian shortbread cookies, popular. These resemble Persian cookies.

Ingredient

– 1/2 cup ghee – 1/2 cup sugar – 1 cup chickpea flour gram flour/besan – 1/2 tsp cardamom powder – 1/2 tsp salt – 1 tsp baking powder

Preheat oven to 350 F/180 C. Add sugar and ghee to a large bowl.

Whisk until creamy and light-colored. Cardamom, salt, and baking powder.

Add chickpea flour and mix until crumbly. Make dough balls with your hands and place on a prepared baking tray.

Bake cookies 15-20 minutes till light golden brown. Store in an airtight container after cooling on a wire rack.
