Vegetable Pesto Pasta, also known as pesto primavera or pasta primavera, is a light, fresh pasta dish with seasonal vegetables, basil nut pesto, and tender spaghetti.
– 8 oz pasta of choice – 5 oz cremini mushroom– 1 cup butternut squash – ½ cup bell pepper – ½ cup broccoli floret– 2 small tomatoes – 2 cups spinach– 1 small brown onion – ½ cup Homemade or store-bought green basil nut pest

Set aside the starchy cooking water after cooking the noodles. Put butternut squash cubes on a parchment-lined baking sheet.

Sprinkle salt, pepper, and oil on squash. Baking at 400 F for 20 minutes. Mix spaghetti and pesto in a bowl.

After sautéing onion and mushrooms in a nonstick skillet, add tomatoes, bell peppers, broccoli, and spinach.

Finally, add pesto noodles, more pesto if needed, noodle-cooking water, and parmesan before serving.
