Easy Vegetable Soup Recipe
Simple veggie soup with broccoli, potato, and more! a tasty dinner recipe that is vegan, paleo, and Whole30
INGREDIENT
– 2 Tbsp avocado oil
– 1 cup yellow onion finely chopped (about 1/2 onion)
– 3 cloves garlic minced
– 4 cups vegetable broth
– 1 medium-sized russet potato peeled and chopped
– 2 large carrots peeled and chopped
– 1 zucchini chopped
– 1 crown broccoli chopped
– 2 vine-ripened tomatoes or 1 (!4-oz) can diced tomatoes, drained
– 2 tsp Italian seasoning
– 1/4 tsp sea salt to taste
INSTRUCTIONS
Turn the heat up to medium-high and add the avocado oil to the large stock pot.
Step 1
Add the onion and cook, stirring every now and then, for about 5 minutes, until the onion is clear.
Step 2
After you add the garlic, cook for another two minutes or until the food smells very good.
Step 3
Add the chopped carrot and potato to the pot after adding the broth. Put a lid on it and boil it all the way through.
Step 4
It will take about 5 minutes of cooking until the potato is soft and just barely al dente.
Step 5
Mix in remaining ingredients, cover, and boil. After the soup boils, reduce heat and simmer for 5 minutes to cook the vegetables.
Step 6
Keep cooking for 15–20 minutes for soft vegetables. Season soup with sea salt to taste. Serve in big bowls and enjoy!
