Easy 5-Ingredient Flourless Chocolate Cake Recipe


Flourless chocolate cake that is soft and delicate but tastes rich and delicious. It only takes 30 minutes to make with 5 simple ingredients.


– 8 oz 227g dark chocolate (60-70% cocoa solids) – ½ cup 113g salted butter – 5 large eggs at room temperature – ⅔ cup 145g packed light brown sugar – 3 tablespoon 18g cocoa powder (I prefer this one)



Preheat oven to 350°F. Prepare an 8-inch springform pan with butter and paper. Low-simmer butter and chopped chocolate. Stir often until smooth and melted to avoid burning. Calm down.


Step 1

Frost eggs in a stand mixer bowl for 1 minute on high with the whisk attachment. Add sugar one tablespoon at a time and beat on medium-high for 6 minutes until pale, thick, and voluminous.


Step 2

Add salt and melted chocolate slowly using a broad spatula. Blend with sifted cocoa. Bowls of thick chocolate sink. Do not overmix batter, which deflates.


Step 3

Fill rimmed baking dish with batter. This cake should be fluffy and cracked after 30 minutes. Heavy, dry material is fragile. Transfer cake pan to wire rack to cool.


Step 4

Carefully knife-edge and release pan sides. Whipped cream and cocoa dust optional. Room temperature is best for this cake. Dry, hot knife slices.
