DIY Chocolate Peanut Butter Fudge Pop-Tarts Recipe 

I have no idea why. September may be back to school or because of baking decadence. I always think about Pop-Tarts around September. Remember my chocolate fudge pop-tarts from two years ago? A popular dish on this site is the greatest for a reason. That fudge filling is everything.

Ingredient

– PEANUT BUTTER FUGE FILLING – 1 cup creamy peanut butter – 2 tablespoons butter softened – 2 tablespoons powdered sugar – 2 teaspoon vanilla extract – DOUGH – 3 1/2 cups flour – 3 tablespoons unsweetened cocoa powder – 1 tablespoon sugar – 1/2 teaspoon salt – 1 1/2 tablespoons sticks cold butter cut into 1/2 inch pieces,12 – 1/2 cup ice cold water – FROSTING – 2 cups powdered sugar – 2 tablespoons meringue powder – 1 tablespoon vanilla extract – 2 tablespoons cocoa powder – 3-6 tablespoons water – 2 ounces dark or milk chocolate melted – 1 tablespoon creamy peanut butter – 1/4 cup creamy peanut butter warmed – Coarse salt or sugar for sprinkling

Parchment two baking sheets. Mix peanut butter, 2 tablespoons butter, powdered sugar, and vanilla in a bowl until smooth and creamy to make peanut butter fudge filling. Set aside.

Mix flour, cocoa powder, sugar, and salt in a large bowl. Add butter pieces and crumble with pastry blender or fingers. Add water gently to make dough.

Place the dough between two large parchment papers or on a lightly floured surface. Roll to 1/8". Cut dough into 6 1/2 x 4 1/2-inch rectangles. Spread a heaping dollop of peanut butter on one rectangle side.

Top the filling with the other half of dough forked. After all dough is gone, roll remaining dough into rectangles. Refrigerate covered baking sheets 30–60 minutes. Heat the oven to 400°F.Bake pop-tarts 10–12 minutes. Cool fully before icing.

Frost the pop-tarts while they cool. Mix powdered sugar, meringue powder, vanilla, cocoa powder, and 3 tablespoons water in a stand mixer bowl for 7-10 minutes on medium speed until peaks form.

Mix in melted chocolate. Water thins thick icing. I liked 5 tablespoons water. Apply a thin layer of frosting on cooled pop-tarts.

Wait 10 minutes for frosting to solidify, then drizzle with hot peanut butter and sprinkle with salt or sugar. Allow the tart to firm uncovered on a baking sheet for 2 hours. Seal and store for 1 week.
