Crock Pot Cabbage Soup with sausage, fresh vegetables, and rich tomato broth makes a hearty winter meal.
INGREDIENT
– 1 Tbsp avocado oil– 1 yellow onion diced– 1.5 lbs ground Italian sausage *– 4 cloves garlic minced– 2 large carrots chopped– 1 green bell pepper chopped– 4 cups chicken broth– 1 (28-oz) can crushed tomatoes– 1 bay leaf– 1 tsp paprika– 2 tsp dried parsley– ¼ tsp black pepper– Sea salt to taste– 6 cups green cabbage sliced**
INSTRUCTIONS
Heat avocado oil on medium-high in a large nonstick skillet. Cook chopped onion for 3–5 minutes, stirring occasionally, until softened.
Step 1
A spatula breaks raw Italian sausage and minced garlic into small pieces in the skillet. The sausage should be lightly golden-brown after a few minutes. Undercooked.
Step 2
Place sausage mixture in crock pot bottom. Stir in chopped carrots, bell pepper, chicken broth, crushed tomatoes, bay leaf, paprika, dried parsley, salt, pepper, and a third of the cabbage.
Step 3
Ensure everything mixes. If possible, stir the remaining chopped cabbage into the soup. Leaving it on top will cook it down as the soup cooks.
Step 4
Cover the crock pot and cook on high for 4-5 hours or low for 6-8. Great if you can stir the soup after an hour to add cabbage!

Eat big bowls of soup with garlic bread, toasted baguette, or cornbread!
