Creamy Sun-Dried Tomato Spaghetti Squash with Chicken Recipe

INGREDIENT
– 1 medium-sized spaghetti squash roasted– 1 cup red onion or yellow onion, chopped– 1 pound boneless skinless chicken breast chopped– 4 cloves garlic minced– 2 tsp paprika– ¼ tsp red pepper flakes optional– 1 (15-oz) can full-fat coconut milk– 1 (8-oz) jar sun-dried tomatoes, drained– 5 ounces baby spinach– Sea salt to taste
INSTRUCTIONS
Heat the oven to 375°F. Cut the spaghetti squash tip and tail with a sharp knife, then cut it hot dog-style in half. Dull knives make this hard. Be careful when cutting squash.
Step 1
Spoon out seeds and innards. Apply 1-2 tablespoons olive or avocado oil per half to the cut side. Apply oil to skin with fingers or a silicone brush to lightly coat. Season meat with sea salt.
Step 2
Place cut-side-down spaghetti squash on a large baking sheet. Roast spaghetti squash 40–55 minutes on the centre rack of a preheated oven.
Step 3
Cook al dente noodles 35–40 minutes and soft noodles 45–55 minutes, depending on squash size. After baking, let squash cool enough to handle. Make sun-dried tomato sauce while squash roasts.
Step 4
I heat avocado oil on medium in a 12-inch deep-lip nonstick skillet. Sauté the onion for 5 minutes, stirring occasionally, until softened.
Step 5
Add chopped chicken and minced garlic to the skillet evenly. Chicken should be slightly golden-brown after 5–6 minutes of stirring.
Step 6
Add paprika, red pepper flakes, coconut milk, and drained sundried tomatoes. Mix everything. Stir the sauce occasionally as it boils until it thickens to alfredo sauce consistency, 10–15 minutes.
Step 7
Don't worry if your coconut milk has a lot of flesh-water separation. Remove everything from the can. Heat melts coconut cream and water.
Step 8
Cover baby spinach in skillet. Wilt spinach in 2–3 minutes. Mix with sun-dried tomatoes.
Step 9
Fork-release spaghetti squash strands from halves into sauce-filled skillet. Make sure everything mixes. Test the dish and add sea salt and lemon juice.
