Cream Cheese Biscuit Skillet Strawberry Bourbon Cobbler Recipe

Amazing Skillet Strawberry Bourbon Cobbler with stacked cream cheese biscuits! Fresh strawberries and bourbon are in every bite. Topped with flaky, buttery cream cheese biscuits. It's pretty, easy to make, and you can use any berry instead of strawberries.

– BISCUITS – 3 1/2 cups all-purpose flour – 2 1/2 teaspoons baking powder – 1/4 teaspoon kosher salt – 2 sticks (16 tablespoons) cold salted butter, cubed, plus melted butter, for brushing – 1 cup buttermilk – 4 ounces cold cream cheese, sliced into 3 slice – coarse sugar, for sprinkling (optional) – STRAWBERRIES – 6 cups fresh or frozen strawberries, sliced (about 3 pounds) – 1/4-1/3 cup honey – 1 tablespoon cornstarch – 3 tablespoons bourbon (optional) – 2 tablespoons fresh lemon juice – 2 teaspoons vanilla extract

Warm the oven up to 400° F. To make the cookies. Put the flour, baking powder, salt, and butter in a food processor and blend them together.

Mix on and off until it clumps together into pea-sized balls. The dough should look "shaggy" after adding the buttermilk. It will be a little dry.

Flatten the dough into a 1-inch square on a clean surface. Cut dough into 4 pieces. Put 1 slice of cream cheese on 3 squares and gently flatten. Layer cream cheese-topped slices.

Top the stack with the last cream cheese-free piece. Press down to flatten. Roll dough into a 1-inch rectangle on floured surface. Slice 12 biscuits. Chill on a parchment-lined baking sheet for 10 minutes.

Make filling. Over high heat, add half the strawberries and honey to an 11- to 12-inch oven-safe skillet. Berry juices bubble after 5-10 minutes of boiling. After cooling, add remaining strawberries, cornstarch, bourbon, lemon juice, and vanilla.

Remove biscuits from freezer, brush with melted butter, and sprinkle with coarse sugar. Place biscuits on strawberries.

On a baking sheet, place the skillet. Bake till golden, 35-40 minutes. Let cool 5 minutes. With ice cream, serve warm or room temp.
