– COOKIE DOUGH– 2 cups oat flour– 1/2 cup cashew butter– 1/4 cup honey– 3 tablespoons salted butter, at room temperature– 1 tablespoon vanilla extract– 1/3 cup mini chocolate chip– CAKE– 1 box (9 ounces) chocolate wafer cookie– 6 tablespoons salted butter, melted– 3 pints chocolate vanilla ice cream– 1/3 cup chocolate fudge sauce– 12 ounces dark, semi-sweet, or milk chocolate mini chips or chip– 1 tablespoon coconut oil

Making cookie dough. Mix all ingredients except chocolate chips in a bowl or food processor with 1 tablespoon water. Stir in chocolate chips.

Make the cake. Use parchment to line an 8-inch springform pan.
Pulse cookies into semi-fine crumbs in a food processor. Add butter and pulse until it holds together when squeezed.

Reserve 1/4 cup of crumbs. Press the remaining crumbs into the pan's bottom and 1/2-inch up the sides. Ensure tight packing. Freeze 10 minutes.

Roll half the cookie batter into 1/2-inch balls. Press remaining cookie dough into frozen crust bottom. Evenly cover cookie dough with ice cream. Insert cookie dough balls into ice cream.

Cover the fudge with chocolate cookie crumbs. Cover and freeze overnight or 4 hours. Melt chocolate and coconut oil in a microwave-safe bowl.

Release the cake from the springform pan after freezing. Cover the cake in chocolate. Frozen till solid. Serve the cake immediately after removing it from the freezer 5 minutes before.
