Cheesy Ground Beef Taco Pasta Recipe

The ground beef, macaroni, cheesy sauce, and taco flavours make this ground beef taco pasta recipe comforting and hearty. 

– 2 ½ cups uncooked elbow macaroni – 1 pound ground beef  – 2 ½ cup beef broth – 1 cup cheddar cheese or colby jack  – 1 cup mozzarella cheese  – ¾ cup milk  – 1 teaspoon freshly minced/chopped garlic – ½ cup diced brown/yellow onion – 1 teaspoon ground cumin – 1 teaspoon ground oregano  – salt and black pepper to taste – 1 teaspoon paprika or smoked paprika – ½ teaspoon chili powder

Add the garlic and cook for another minute in a large skillet over medium-high heat after the onion softens.

Less fat to drain with a leaner option, but the flavour may be slightly different than with 80% beef. Put taco seasoning in the skillet and stir.

Reduce the heat and cook the pasta for 15 minutes until al dente, stirring occasionally to prevent sticking and keep it cooking evenly.

While resting, pasta absorbs liquid, thickening the sauce. If you cooked the pasta in the sauce, reheating may dry it out.

Mix in 1 cup of shredded cheddar and grated mozzarella cheese on low heat. End heat and serve.
