Cannoli Chiffon Cake

I am only able to consume a tiny portion of it due to the fact that it is really rich. 

I was looking for something that had all of the tastes of a pecan pie but was a 

little bit lighter in flavor and sweetness than a traditional pecan pie.

Even though dessert is one of my favorite aspects of the holiday season,  

I typically don't have much room left for it after I've finished eating a holiday meal that is particularly filled with food. 

There are a lot of eggs used in this cake.  

Despite the fact that you will need to separate the eggs, you will ultimately be able to use both the white and the yolk.
