Make jam. In a medium pot over high heat, combine blackberries, honey, lemon juice, and lavender. Boil the mixture. Mash the berries with a potato masher or fork after boiling.

Cook for 5-8 minutes to reduce and thicken jam by 1/3. Stop cooking and cool. That should thicken with cooling. Prepare a 9x13 in. pan with parchment paper.

Swirl ice cream and jam in a bowl. Don't overmix—you want swirls. Ice cream should be evenly distributed, covered, and frozen for at least 2 hours.

Preheat oven to 350°F. Cream butter, honey, and vanilla in a bowl for 3-5 minutes. Add flour, baking soda, cinnamon, and salt. Combine by beating. Stir in white chocolate.

Add 1 tablespoon of water at a time until dough forms a ball. Cut dough in half. Roll one disc of dough to 1/4 inch thickness between two dusted wax papers. Cut 24 2x2 inch squares.

Place the cookies on a parchment-lined baking sheet. Repeat with remaining dough disc. After mixing lavender and sugar, lightly sprinkle it on the cookies.

Bake 10–12 minutes. Let chill.
Unfreeze the ice cream slab and cut into 12 squares. Sandwich ice cream between cookies. Freeze. Enjoy!
