INGREDIENT

– 3 lbs boneless skinless chicken thighs about 8 to 10 thigh – ½ cup coconut aminos* – 4 Tbsp Gochugang – 3 Tbsp honey – 3 Tbsp toasted sesame oil – 2 Tbsp rice vinegar – 1 Tbsp fresh ginger peeled and grated – 3 large cloves garlic minced For Serving: – sesame seed – 4 stalks green onion – 1 to 2 limes cut into wedge

INSTRUCTIONS

Mix sauce ingredients in a small bowl or cup. Store raw chicken thighs and marinade in a large zip lock bag. 

Step 1

Seal and stir chicken marinade bag. Use a large plastic-wrapped bowl instead of a bag. Refrigerate 20–12 hours. Put chicken in 425-degree oven.

Step 2

Place chicken thighs and marinade in a large casserole or baking dish. Although a deep lip will catch all the juices, a large rimmed baking sheet works. Casseroles are easy to clean.

Step 3

In the center or one shelf up, bake the chicken for 12–18 minutes until 165 degrees Fahrenheit. After baking, baste chicken with pan juices.

Step 4

Return chicken to high broil. Broil thighs until crispy and golden brown, 5–8 minutes. At 180–190 degrees F, chicken thighs taste best. 

Step 5

Check thigh temperature with a digital thermometer in the thickest part. Serve baked chicken after 10 minutes of resting. Fresh lime slices, sesame seeds, and chopped green onions accompany chicken.
