Whole grain oats and less sugar and fat make this cake healthier. Light, fluffy, and cinnamony, this easy apple cake recipe is perfect for fall!
INGREDIENT
– 2 cups rolled oats– 2 tsp baking powder– 3/4 tsp sea salt– 2 tsp pumpkin spice*– 2 large egg– 1/2 cup avocado oil*– 1/2 cup pure maple syrup– 1/2 cup unsweetened applesauce– 1 ½ tsp pure vanilla extract optional– 1 large apple chopped or grated, about 2 cup
INSTRUCTIONS
Preheat the oven to 350°F and line an 8-inch square or round cake pan with parchment. Parchment paper instead of cooking spray makes this cake easier to remove from the pan.
Step 1
A high-speed blender can make flour from oats in 30 seconds to 1 minute. Add baking powder, sea salt, and pumpkin pie spice to the blender and blend briefly.
Step 2
Mix eggs, avocado oil, applesauce, pure maple syrup, and vanilla extract in a large bowl. Combine dry and wet ingredients in a bowl.
Step 3
Cake batter with chopped or shredded apples. Toss apples in 1 tablespoon of flour to prevent sticking to pan!
Step 4
Use a rubber spatula to evenly distribute cake batter in the pan. Top the batter with more apple pieces if desired.
Step 5
Bake for 23–28 minutes in the preheated oven until the cake top is golden brown. At 190 degrees F, cakes are done. Insert an instant-read thermometer into the centre to check cake doneness.
Step 6
Remove the cake from the oven and cool to room temperature. Pull the parchment paper to remove the cake from the pan to a cutting board. Share and enjoy the cake!
