Apple Cider Cheesecake Recipe

Apple cider donut cheesecake! Graham cracker crust, apple cider baked cheesecake, apple cider cinnamon filling, and cinnamon sugar on top.

Ingredient

– 2 ½ cups Graham cracker crumbs fine crumb – 2 sleeves of graham cracker – ⅛ cup Brown sugar packed light or dark – 10 tablespoon Unsalted butter melted – 2 cups Apple cider reduced down to ½ cup – 24 oz Cream cheese room temperature – ¾ cup White granulated sugar – ½ cup Sour cream room temperature – 1 teaspoon Pure vanilla extract – 4 Large eggs room temperature – ¼ cup Brown sugar packed light or dark – ⅓ cup All-purpose flour – ¼ teaspoon Ground cinnamon – 1 tablespoon Melted butter – 1 tablespoon Apple Cider – 1 tablespoon Unsalted butter melted – 1 tablespoon Apple cider – ½ cup White granulated sugar – 2 teaspoon Ground cinnamon

In a medium saucepan, heat apple cider on medium-high. Reduce apple cider to ½ cup. This takes 10-15 minutes. Cool completely.Preheat oven to 325℉. Spray a 9-inch springform pan with nonstick baking spray.

Process graham crackers into tiny crumbs. Mix crumbs, brown sugar, and melted butter in a small bowl. Mix with fork.Put crumbs in pan. Press crust halfway up pan sides with hands. Compact the crust with a measuring cup bottom.

Bake 12 minutes.Mix brown sugar, flour, cinnamon, apple cider, and melted butter in a small bowl. Mix it with a fork. Put in fridge to set.Mix cream cheese and sugar for 2 minutes on high speed. Use a rubber spatula to scrape basin.

Mix in apple cider, sour cream, and vanilla. Medium-mix until smooth.Add eggs. Low-speed mix until mixed. Scrape the bowl with the rubber spatula after turning off the mixer.Pour cheesecake batter over crust.

 Remove the filling and sprinkle it over cheesecake. With a butter knife, stir it in.Bake 70-80 minutes. Bake until the edges firm and the center jiggles.

After turning off the oven, open the door and let it cool for 30 minutes. Then remove the springform plate to a cooling rack. Cool fully.Foil the pan. Let chill for 6 hours or overnight.

Mix apple cider and melted butter in a small bowl. In another dish, add sugar and cinnamon.From pan, remove cheesecake and parchment. Butter cheesecake using pastry brush. Sprinkle cinnamon sugar on cheesecake.
