Ingredients:

For the Donuts:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 cup fresh blueberries

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1-2 tablespoons milk (optional, for desired consistency)

Instructions:

For the Donuts:

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a donut pan with non-stick cooking spray.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, buttermilk, egg, vanilla extract, and lemon zest until well combined.

Combine Wet and Dry Mixtures: Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Add Blueberries: Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.

Fill the Donut Pan: Spoon the batter into a piping bag or a plastic sandwich bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.

Bake: Bake in the preheated oven for 12-15 minutes or until the donuts spring back when touched lightly. Keep an eye on them to avoid over-baking.

Cool: Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

For the Lemon Glaze:

Prepare the Glaze: In a small bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until you achieve a smooth glaze. If the glaze is too thick, add milk, one tablespoon at a time, until you reach the desired consistency.

Glaze the Donuts: Dip the cooled donuts into the lemon glaze, ensuring they are coated evenly. Place them back on the wire rack, allowing any excess glaze to drip off.

Set Glaze: Allow the glaze to set for about 15-20 minutes before serving.

Serve: Enjoy these delightful Baked Lemon Blueberry Donuts with a cup of coffee or your favorite tea!

These baked donuts are a perfect combination of zesty lemon and burst-in-your-mouth blueberries, making them a delightful treat for breakfast or anytime you crave a sweet, fruity indulgence.
