The gooey apple filling, flaky gluten-free crust, and crispy granola topping make this apple pie unique and delicious! Serve with vanilla ice cream for the best dessert!
INGREDIENT
– 1 prepared pie crust– 6 cups apples sliced into ¼-inch thick slices. About 6-8 medium to large-sized apple– 2/3 cup pure maple syrup– 1 Tbsp lemon juice– 2 tsp ground cinnamon*– ¼ tsp ground nutmeg– 1 pinch sea salt– 1 Tbsp gluten-free all-purpose flour or regular all-purpose flour– 1.5 to 2 cups gluten-free granola or granola of choice
INSTRUCTIONS
Prepare or buy pie crust at room temperature. Homemade crust dough: Roll 12-inch circle with rolling pin. Place the pie dough in the pan and pre-bake the crust at 375 degrees F for 15-20 minutes until golden brown.
Step 1
Use crust later. Pre-bake crust. Drop the oven temperature to 350 degrees Fahrenheit and turn it off to bake the pie later. 1/4-inch apple slices after peeling. My apple slices go in a big bowl.
Step 2
In a large saucepan or Dutch oven, mix sliced apples, pure maple syrup, lemon juice, ground cinnamon, nutmeg, and sea salt. Cover and heat pot medium-high.
Step 3
Boil the apple mixture, then reduce to medium. Cover and cook 15–20 minutes, stirring occasionally, until apples are softened and liquid leaches out.
Step 4
Add gluten-free flour (or cornflour or all-purpose flour) until the apples' liquid thickens and becomes gooey. Taste the apples and add more pure maple syrup or cinnamon.
Step 5
Fill pie crust with apple mixture. Sprinkle granola crumb topping on apples evenly. Place the pie on a large baking sheet. This should handle apple filling spills.
Step 6
Cover the pie with aluminium foil and bake at 350 degrees Fahrenheit for 25–35 minutes until the apple filling oozes around the crust and the granola is golden brown.
Step 7
The pie can be served immediately or 3 hours after baking. Warm pie is harder to cut. Cooled pie slices are easier to clean.
Step 8
Serving the pie fresh from the oven is fine with me if you don't care about appearance. Crisp granola. Add vanilla ice cream or whipped cream to sliced pie.
