Pizza-style sausage breakfast casserole with bell peppers, onion, cheese, olives, and tomatoes. Starting the day with this high-protein low-carb breakfast is ideal!
INGREDIENT
– 1 Tbsp avocado oil– 1 small red onion chopped– 3 large cloves garlic minced– 1 (12-oz.) package pre-cooked sausage of choice sliced*– 5 ounces baby spinach optional– 1 green bell pepper chopped– 1 (4-oz) can sliced black olives drained– 1 cup cherry tomatoes or 1 large vine ripened tomato, chopped– 16 ounces grated cheese of choice **– 12 large eggs well-beaten
INSTRUCTIONS
Add chopped onion to avocado oil in a large skillet over medium-high heat. Sauté the onion for 5 minutes, stirring occasionally, until softened.
Step 1
Add minced fresh garlic and sliced sausage links and cook for 3–5 minutes until golden brown. Cover the skillet with baby spinach and cook for 2–3 minutes until wilted.
Step 2
Heat a 350-degree oven. Cooking spray a large casserole dish lightly. I use 13x9 casserole.
Step 3
Put chopped bell pepper, olives, and tomatoes in a large casserole dish. Mix in the onion sausage mixture. Beat eggs well in a large bowl. Mix in half the grated cheese.
Step 4
Stir the beaten egg mixture with a spoon or fork into the casserole dish to distribute it evenly. Top with remaining cheese.
Step 5
The egg bake should be baked on the centre rack of the preheated oven for 35–45 minutes until golden brown.
Step 6
Slice and serve the cheesy sausage egg bake after 10 minutes of cooling. Add salsa, sliced avocado, sour cream, and grated cheese.
