Heat the oven to 400°F. Parchment a baking sheet.
Mix blueberries and 1 tablespoon cornstarch in a medium bowl.

Add honey, lemon zest, juice, thyme, and vanilla.
Roll puff pastry to 1/4 inch thick on a lightly floured surface.

Cut four rectangles and place on baking sheet. Spread blueberries evenly on each rectangle, leaving a 1/2-inch border. Fold the sides over blueberries.

Spread beaten egg and coarse sugar on pastry edges. Bake for 20–25 minutes until golden brown.
