Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the rolled oats, whole wheat flour, baking soda, ground cinnamon, and a pinch of salt. Stir to combine.
In another bowl, whisk together the honey or maple syrup, melted coconut oil or butter, egg, and vanilla extract until well combined.
Pour the wet ingredients into the bowl of dry ingredients. Mix until all the ingredients are well incorporated. If desired, fold in the add-ins at this stage.
Use a spoon or cookie scoop to portion out the dough. Place the portions on the prepared baking sheet, leaving some space between each cookie.
Use the back of a spoon or your fingers to gently flatten each portion of dough into a cookie shape.
Place the baking sheet in the preheated oven and bake for approximately 10-12 minutes or until the edges of the cookies turn golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
