Hidden Vegetable Mac And Cheese Recipe
This Hidden Vegetable Mac and Cheese is great for kids and adults who are picky eaters. It is surprisingly smooth and cheesy for being so full of healthy, colorful veggies. By switching a few things, you can make it gluten-free and vegan.
Ingredient
– Pasta
– 2 Cups Macaroni
– 8 Cups Water
– 2 Tablespoons Salt
– Vegetable Puree
– 1 Cup Carrot
– 1 Cup Pumpkin
– 1 Cup Cauliflower
– 1 Cup Water
– Cheese Sauce
– 3 Tablespoons Butter
– 3 Tablespoons Plain Flour
– 2 Cups Milk Warm
– 2 Cups Cheddar Cheese

Pasta Add salt to boiling water. Add macaroni and cook again.

7 minutes until al dente.
Set pasta aside after draining water. Vegetable Puree
Combine vegetables in a saucepan.

Add 1 cup water, cover, and simmer 8-10 minutes until soft.
Carefully combine or stick-blend the vegetables until smooth. Sprinkle salt and set away.

In a saucepan, heat butter and add flour. Whisk continually for 2-3 minutes.

Keep stirring as you add 1/4th (half a cup) of milk. The flour will lump, as expected.
Continue whisking/stirring as you add all the milk.

Stir/whip until the sauce is thick and coated your spoon. Remove heat. Stir in shredded cheese until melted. Mac and Cheese with Hidden Vegetables

Mix the purée into the cheesy sauce. Mix cooked macaroni with cheese and vegetable sauce.
Season and serve warm.
